Avocado toast is the new rage in terms of kitschy healthy food crazes, but in my opinion it really does live up to the hype. Being vegetarian avocado can be such an important source of protein, and not to mention it tastes delicious. I put this under snacks but it’s also great for breakfast and lunch.

Ingredients: This is a little different than most of my other recipes because the recipe is pretty fluid. You definitely need the toast and avocado, but the other toppings are completely up to you. I like to do eggs for breakfast, roasted red peppers and feta or cucumbers and tomatoes for lunch or a snack. I love roasted red peppers so I’ll usually roast them in advance and then keep them in my refrigerator and throw them on when I need them. This can be a super quick and easy recipe with some good calories to give you energy.
