Veggie Pasta

This recipe is really easy and versatile, you can do it with whatever veggies you have on hand.

Prep Time: 15 min

Cook Time: 30 – 40 min

Total Time: 45 – 50 min

Serves: 5

Ingredients:

  • 1/2 a red pepper, chopped
  • 1/3 of a head of cauliflower, chopped
  • 1 cup of snap peas
  • 1/4 of an onion
  • 3 cloves of garlic, minced
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup olive oil
  • 16 oz of your choice of pasta
  • 1/4 cup fresh Parmesan cheese

Instructions:

  1. Preheat oven to 475
  2. Combine veggies, garlic, most of basil, and olive oil in bowl and mix
  3. Put veggies on an oven tray lined with tin foil and place in oven for 25 to 30 minutes, until tender
  4. Bring a saucepan of water to a boil and add pasta
  5. Cook pasta to your preference, usually it takes about 6 to 10 minutes
  6. When everything is cooked combine in bowl and mix in Parmesan cheese and garnish with remaining basil
